The mother forms when bacteria and yeast collide and appear as strands floating in vinegar. It contains enzymes and proteins as well as beneficial bacteria and will settle to the bottom of the bottle. You can gently swirl the vinegar to mix the mother into the rest of the liquid. Unfiltered apple cider vinegar has a cloudy appearance, but supposedly contains more healthy attributes than filtered apple cider vinegar.
